  • How to Make Mandazi – a Kenyan “Donut”

    Mandazi is one of the popular African dishes that you will find in the greater lakes of coastal regions of East Africa inhabited by the Swahili community.
    It is a dish that can be served as a breakfast with tea, appetizer before lunch, or even a soft late night dinner to entertain your groaning stomach before going to bed.
    In this instruction, I’ll show you how to cook this dish and have it ready to be served in less than two hours.
    Step 1: Ingredients
    2 cups of warm water.
    2 tsp. baking powder.
    4 cups all-purpose flour.
    1/2 cup sugar.
    2 tsps. vegetable oil.
    Pinch of salt.
    Note: All ingredients should be at room temperature and make sure that you have enough vegetable oil for deep frying
    Step 2: Preparation of Doughre Images
    In a mixing bowl, combine the flour, baking powder, and the sugar.
    Mix the water and the vegetable oil. Gradually add this mixture to the flour while kneading into dough. Use additional water if necessary.
    Knead for about fifteen to twenty minutes until a smooth and elastic dough is formed.
    let dough rest for several minutes.
    Divide the entire dough into six equal round balls.
    Spread every ball onto a flat surface maintaining a circular shape of the dough.
    Cut the flattened dough into four equal quadrants.
    Repeat steps 6 and 7 until you spread and cut all the round balls.
    Place all of the dough quadrants in a cookie sheet. This will prevent the dough pieces sticking onto each other.
    If you are the type of person who likes to add a little fluffiness to their food or snacks, I’d recommend adding some eggs and milk when making the dough.
    Also, you can use granulated yeast instead of baking powder, but you’ll have to allow more time for the dough to rise before spreading and cutting it.
    Step 3: Frying the Dough
    Heat a few cups of vegetable oil to 400F – 500F in a skillet or deep pot.
    Carefully put dough quadrants in the hot oil.
    With Caution, turn the dough a few times until they are golden brown all over.
    Fry only as many together as they can float in the oil without touching one another.
    Once completely fried, take them out and place on a paper towel to drain.
    Step 4: Serving the Dish
    Let it cool down and drain most of the oil off of the Mandazi.
    Serve them on a plate with tea in the morning.
    When serving, you can serve with some sort of dipping sauce and it happens to work with almost all of the known sauces available.

    ¼ cup of brown sugar
    ¼ cup of maple syrup
    1 cup of grated carrot
    1/3 cup of uncooked millet

    Instructions on Preparation

    1. Mix yeast and warm water in a bowl and stir.
    2. Let sit for 5 minutes until yeast dissolves.
    3. Add flour, salt, cardamom, and cinnamon to bowl and mix.
    4. Add vegetable oil, egg, coconut milk, and sugar.
    5. Mix until dough does not stick to the side of the bowl. (Add additional flour as needed)
    6. Place the dough in an oiled bowl and cover with plastic wrap. Let it rest for about an hour, until dough rises.
    7. Heat oil in a frying pan (or wok).
    8. Cut the dough into 6 pieces to make it easier to roll. Roll each piece so dough is ½ inch thick.
    9. Cut into triangles and place in hot oil. Fry on both sides.
    10. Place donuts on paper towels to soak up oil.

    INGREDIENTS

    • 1 cup warm milk
    • ¼ cup vegetable oil
    • ¼ cup fine white sugar
    • 1 medium egg
    • 2 teaspoons instant yeast
    • ½ teaspoon salt
    • ½ teaspoon ground cardamom
    • 3 ½ cups all-purpose flour, sifted
    • 2 quarts vegetable oil for frying

    INSTRUCTIONS
    STEP 1
    Combine milk, vegetable oil, sugar, egg, instant yeast, salt, and cardamom in a large bowl. Mix in the flour 1 cup at a time until the dough comes together and is easily handled. Knead the dough on a flat work surface until it’s no longer sticky. Return the dough to the bowl. Cover and let it rise in a warm place for 1 hour or until it’s doubled in size.
    STEP 2
    Press the dough down gently. Knead it briefly, then divide the dough into 4 equal portions. Roll each portion into a ball. Keep the dough balls covered with a cloth to prevent the dough from drying.
    STEP 3
    Roll each dough ball into a -inch-thick circle on a floured work surface. Cut each circle into 4 triangles using a pizza cutter. Cover with a cloth.
    STEP 4
    Heat 2-inches of oil in a deep fryer or large saucepan over medium heat.

    Working in batches, fry the dough in the hot oil for 1 to 2 minutes or until pued. Flip the dough and continue frying until golden brown. Transfer the donuts to a paper towel-lined plate to drain.
